One. Remember to add acidic
ingredients (like tomatoes) and
salt after the beans are soft.
(The skin on the beans, lentils,
etc. is toughened by the acid in
tomatoes and the cooking time is
lengthened substantially. This
is especially important when
using a crock-pot.)

Two. A
crock-pot can be used for most
of these mixes. The long, slow
cooking time is great for beans.
Suggestions for cooking times is
on the packages, but you should
also refer to your own crockpot
guidebook for suggested times.

Three.
Beans
could be soaked unless they have
been pre-soaked, as in some of
our mixes. Beans could be
pre-soaked in quantity, then
frozen until you wish to use
them in a recipe. The end cooked
product can also be frozen or
kept in refrigerator for 3 days.
(Tip: Don't have time to
pre-soak? Cook the recipe for
an extra half hour.)

Four. When using Glenlochar
mixes, use recipes as a
guideline and feel free to add
more vegetables of your choice.
Most can be made meatless.
However, even a small amount of
meat will add heartiness and
flavour. |
